About Us

Noi siamo parte della "slow food" rivoluzione, non facciamo "fast food" ...
We are part of the slow food revolution, we do not do food fast...

A little about what we do here at Il Toro....

All our pasta, gnocchi, sauces, biscuits and cakes are hand made daily. Our long pasta is made in a traditional laminated method. Laminated pasta is formed by passing dough through a set of adjustable rollers several times to form continues sheets of pasta dough. The space between the rollers is decreased each time the dough is passed through, making the sheet of dough thinner and giving it resiliency and strength. Once the sheet of dough reaches the desired thickness it is placed through a set of cutting rollers. We cook our pasta to order, nothing is pre-cooked.

A little bit about our team....

Jim and Caitlin Talladira, a father daughter team from a mixture of north and south of Italy heritage. On Jim’s mothers side hospitality runs in the family with Jim’s Nonno owning the first Italian restaurant in South Australia named Capri in Rundle Street circa late 50s. And plenty of family still in Italy running many different places such as a restaurant in Asiago and a ski lodge in the Alps. Jim is also a trained and well experienced chef with 30 years in the industry.

“I have wonderful memories of my childhood. Familiar smells and tastes take me back to my early days of being a young boy in my grandparents kitchen. Firstly my grandma always had on her floral apron, working diligently whisking, kneading, chopping. Orchestrating wonderful aromas and flavours from her small kitchen. And then there was my grandfather who stood many times over the stove like a head chef giving my grandma guidance in which way the sugo should be made, or that polenta needs to be stirred in one direction only. I’ve had a food festival upbringing and a way of sharing our families traditions with your family. Il Toro is dedicated to my grandparents, Cristiano and Shirley Pangrazio, who gave me the passion for food.......”
